Join Nelson Tiburcio, Medical Center Retail Manager and Sushi Chef, as he creates sushi and sashimi dishes using traditional preparation methods. Taste and enjoy maki rolls, sashimi and nigiri as he shares tips for preparing, along with their health benefits.
Vandy Cooks Nelson Tiburcio was originally from the Philippines and finished his college with the degree of Business Administration. He has been in Nashville since 2001. He was a sushi chef for 16 years until he decided to join and manage the food service for Sodexo (food company) last 2009. Presently, he is the retail manager in the Courtyard Café at Vanderbilt University Medical Center, as well as, still making sushi for private parties.
The Vandy Cooks demonstrations are offered monthly in the Vanderbilt Recreation and Wellness Center’s Demonstration Kitchen to celebrate healthy eating at Vanderbilt.

Wednesday, September, 21—1PM Join Chef Todd Gillam as he kicks off our fall with Healthy Game Day Eating. Come be inspired by Chef Gillam’s culinary expertise and passion for healthy and delicious food.
Friday, October 21, 12—1PM Chef Lucius Carroll will intrigue you with his preparation of vegetarian meals in Trending to Plant-Based. He will draw inspiration for this Vandy Cooks from his own personal experiences for serving vegetarian dishes at home.
Friday, November 18, 12—1PM Jessica Bennett, Registered Dietitian Nutritionist with a specialty in sports nutrition, will share creative dishes to make ahead and have ready for when you are hungry and famished or short on time.
Friday, December 9, 12—1PM Three registered dietitians in the holiday spirit (Marissa Wertheimer, Melinda Mahoney, and Marilyn Holmes) will team up to create holiday breads….the audience will have opportunity to help make the breads and leave with a loaf for an upcoming holiday gathering. (Reservations required for this Vandy Cooks.)
