After completing undergraduate work, Coe began working at Vanderbilt University in the Department of Surgery under Dr. Daniel Beauchamp, performing surgical procedures and in vivo imaging on hepatocellular and colorectal carcinoma models. He was later employed through the Department of Environmental Health & Safety as a health physics technician. After a few departmental changes, Coe was eventually given a full-time position under Dr. Darryl Bornhop in the Department of Chemistry and Dr. Robert Coffey in the Department of Surgery.

Current research interests include the testing of near-infrared molecular imaging agents for in vivo tumor detection, development of effective mouse tumor models, multi-modality comparison of diagnostic imaging techniques for multi-stage tumor detection, therapeutic intervention of colorectal carcinoma, and investigation of diffusion among distinct cancer cell phases via MRI.

Outside of work, interests include strength training, physics & mathematics, nutrition, world politics, and martial arts.
